Limousin oak

The wood from each of these forests has slightly different characteristics. Oak is the dominant wood used in making spirit casks. This beautiful, but hidden part of central France is a landscape of meadows and oak and sweet chestnut forests. There are about 6different species of Oak though and not all created equally.

Trees from the forest can only be harvested when they are 1years of age or older. These trees are sustainably harvested from the old forests in the northwestern part of the Massif Central in France. As such, harvest quantities are limited. French oak is split to follow the wood’s natural vertical sap channels, called medullary rays.


Limousin Oak is one of the jewels of the species. The region is also a major timber producing area. It is also the home of Asbach, Germany’s premium brandy distiller.

Both the Quercus robur and Quercus patraea species are grown here, though barrels made in this region are not commonly used in winemaking, as the relatively wide grain of the oak here imparts flavors, which are considered too bold and simple. Notes of brown butter, soothing sandalwoo and nougat are all evident on the palate, which is light and youthful with plenty of classic rye spice notes.

The end result is a honey hue, with vanilla bean and orange peel. The nose is rich and oaked. There are notes of chewy resinous wood with a well-balanced acidity.
